Fajita Stew

If you love stews and soups, you should try this super flavorful Fajita stew. It's the perfect combination of short ribs, peppers, chili, dried oregano, and cannellini beans. Source : Passthesushi

Ingredients

  • 3 tbs olive oil
  • 1 1/2 lbs bone in short ribs
  • 1 onion, diced / 1 pepper, diced
  • 5 tbs butter
  • 2 tbs cumin
  • 1 teas chili powder
  • 1 teas dried oregano
  • 1/2 teas paprika
  • 1 package fajita seasoning if you still need more fajita flavor
  • 1/4 cup flour
  • 4 cups beef broth
  • 1 15oz can diced tomatoes
  • 1 16 oz can cannellini beans, drained

Direction

  1. Heat 3 tbs olive oil in a large stock pot over medium heat until shimmering,. Sprinkle salt and pepper over the short ribs and saute 3 minutes per side. Remove from pot and set aside.
  2. In the same stock pot, melt butter over medium heat. Saute onion and pepper about 5 minutes, until tender. Stir in cumin, chili powder, oregano, paprika and seasoning mix if using. Mix in flour and cook 2 minutes. Slowly whisk in the beef broth. Add tomatoes and reserved short ribs; bring to a boil. Reduce heat and simmer 1 1/2 hours.
  3. Carefully discard bones and shred meat to bite sized pieces. Return beef to stew and stir in beans and cook an additional 15 minutes.
  4. Serve with shredded cheese, red onion, scallions or sour cream toppings.
